"As a Sous Chef, I feel it should be more training and involvement with the staff. Getting them to do and be better I feel should be the main goal. Diving into the station or work should be a last resort. At the current time. I am always in the mix and don't get to see half of the employees. So how am I supposed to coach and train. Constantly raising the bar and making employees and guests feel good is what drives me. Seeing an honest smile come from one for something small makes the day."

"Relaxed environment, that's pretty much it. theirs a lot of down time in which everyone just stands around."

"DON'T. they may pay well but the hours suck and the culture is extremely fake and not worth your time. you will learn nothing."

"no freedom, no respect, disorganization, no trust, owners and mangers play favorites. the sous chef doesn't even know recipes."

"teach your staff to be better, don't be so paranoid that someone will steal your idea. its just food."

"Everyone seems to point fingers, no one takes responsibility for anything, and that ends up usually wasting time and energy that could be focused on solving the problem, or preventing it from happening."

"I would organize our sales stat programs into one, evaluate store level upper management more frequently, support managers more, and focus on doing less but doing it the right way."

"Disneyland can be a fun place to work--it's an amusement park and all about entertaining people and making them happy."

"If you really want to work there, you will start at the bottom, as they promote from within. You have to accept this. Also, if you can't work weekends and all holidays, don't bother."

What don't you like about working at Disneyland Hotel?

"Foodservice is managed by amateurs who really seem to care more about protecting their position than doing great work. Watch your back."

"Upper management should take a close look at what their underlings are actually doing, instead of relying on what they are told."

"the inability to be flexible with schedule, a lot of double standards, not enough support from management when disciplinary action was needed, a lot of disorganization, certain members of management lack of respect or professionalism"

"be open to hearing what staff has to suggest, support management on discipline, be fair, no special treatment, be as flexible as employees are expected to be."

What do you like about working at Food Services of America?

"The people I worked with on a daily basis. At work it felt like family. The owner would help when needed, managment would also put on an apron. The exec Chef was always willing to listen. I was given many oportunities to improve menu items or introduce new foods."

"Just be humble, you will have opportunity to show what you can do."

"Some managment people abused their position and would make kitchen life miserable"

"Take time to talk to the staff that does the physical labor in the kitchen. Once you get to know the crew you may have a different opinion."
