"No cleaning crew means that 3/4 of work time is devoted to prep/cooking, while the other 1/4 time is spent meticuluously cleaning during closing shifts."

"Whenever it got too busy, not everyone working on the same page, so we'd get backed up and not deliver outstanding customer service."
