"I am associated with Cactus Restaurant Group from January 2000 and now on my third contract with the same company, this is because my commitment toward work, I joined as Head Chef and grown with the company us Group Executive Chef taking care of complete Food and Beverage Department Operations from Kitchen, Service, Kitchen stewarding, Purchase and Stores, I am proud to say that I am on Salary and Profit Sharing, I hold a share on the Net profit of complete Food & Beverage Business. I went to Armenia before the Restaurant could start to learn the market, the language, and the ingredients available. I recruited Staff for the kitchen, ordered equipments, cutlery, crockery, Mexican spices. I prepared the menu, pricing and costing. I prepared special menus for theme nights. My major role was to follow the food SERVSAFE rules, have HACCP System to control risk and hazards throughout the flow of food. Upgrade the menu, conduct Theme Menu and improve the Dessert menu and to educate and train the staff in SERVSAFE and HACCP systems."
