Hibachi Chef
in Dearborn, MI

"I worked at Benihana for roughly 3 years. I started off as a utility maintenance worker and moved up to chef. I made the same amount of money in both positions, minimum wage, the only difference is that as a chef you make tips. The tip situation at Benihana Dearborn is on the lower side. Benihana's new tip system which was enacted in the beginning of 2014 states that the wait staff tips out the chef 6-7% of hibachi sales, which is a decrease from what it was, but any tip the chef makes at the table they may keep. The tips that the waitstaff give to the chefs are first given to the management and are thus taken out of our checks. My W-2 for this year is 26,299.01 including tips. The jobs there are hard and you will only make mediocre money. I know the dish washers, kitchen helpers, hostess, and busboys only make min wage, and the wait staff makes 2.80 plus tip. I do not know how much sushi, head chef, or management makes. Raises are few and far in between; since I did not receive a raise because I "switched positions". We were not allowed to order food on days we worked, and the food they served us I would not even feed to my dog. When I first started working there I loved my job, I respected the place, but now after seeing on how they treat their employees, I have no respect for the whole company."
